Veggie Wrap

Over the summer  I met some girls from college in the city for drinks and dinner after work. We wandered about for a half hour and ended up at a sports bar/bowling alley. For dinner, I had the best veggie wrap ever. and that margarita wasn't half bad either.

Ingredients
2 T olive oil
1/4 c. zucchini
1/4c. summer squash
1/4 c. red pepper
1/4 c. onion
1/4 c. carrot
2 T soy suace
1 T balsamic vinegar
3 flour tortillas
Salt and Pepper

Directions
  1. Pour olive oil in frying pan and saute veggies. 
  2. Add soy sauce, balsamic vinegar and salt and pepper to taste.
  3. Toast/warm tortillas over stove top (or in microwave).
  4. Place veggies in tortilla and wrap.
  5. Enjoy.
