World's Best French Fries

Seriously, seriously, seriously the best fries I've ever eaten/made. They taste like deep fried restaurant fries, but are actually oven-baked. I don't make these too often because they're sooo good.
Recipe adapted from Annie's Eats
Ingredients
3 russet potatoes
5 T vegetable oil
3/4 t. kosher salt
1/4 t freshly ground pepper
  1. Preheat oven to 475
  2. Peel and cut lengthwise into even sized wedges; Place in a large mixing bowl; Cover with hot water; soak for 10-30 minutes
  3. Place 4 T of the oil onto a heavy, rimmed baking sheet; spread evenly over pan with a pastry brush; sprinkle with salt and pepper
  4. Drain the potatoes; dry wedges with towel; dry bowl; toss wedges with remaining 1 T of oil
  5. Arrange potatoes in single layer on the baking sheet and cover tightly with tinfoil; bake 5 minutes
  6. Continue baking for 10 minutes; using a metal spatula and tongs flip; bake 5-15 minutes until fires are golden and crisp
  7. Transfer fries to a paper towel-lined plate; season with additional salt and pepper; serve & nom
POTATOES
Peel and cut in wedges
Oil pan; Salt and Pepper
Soak in hot water 10-30 minutes
Place in single layer
Bake covered in foil for 5 minutes; 10 minutes; flip 5-15 more minutes
