5 Minute Coffee Cake in a Mug

Sometimes you just need coffee cake. Now, a perfect recipe for one that's ready in like 5 minutes. AWESOME. Sweet and cinammony, warm and gooey. perfection.

Coffee Cake in a Mug

1 T. Butter

2 T. sugar

1 egg

2 T. sour cream

some vanilla

1/4 c. flour

1/8 t. baking powder

pinch of salt

1. Microwave butter in mug (I like big mugs, but you can use a smaller one) for 10-15 seconds until soft; stir in sugar
2. Add egg; sour cream and vanilla
3. Mix in flour, baking powder and salt
4. make crumb topping

CRUMB TOPPING

1 T butter

2 T flour

1 T brown sugar

2 t cinnamon (go nuts on this one :) )

1. Mix ingredients together with your fingers until they form crumbs
2. Sprinkle on top of batter in mug
3. Microwave 1 minute 20 seconds give or take
4. [For days you can't resist, double crumb topping and alternate 1/2 batter, 1/2 crumb, 1/2 batter, 1/2 crumb...]
